1 to 3 racks of pork ribs

bbq sauce
Rub ribs with spice. Cover and refrigerate 12 to 24 hours. Put in smoker and smoke 2 to 3 hours. Remove from smoker and bag in vacuum bags, evacuate, and seal. Put in sous vide at 155° for 24 hours.
If desired, brush with BBQ sauce and place under broiler for 5 to 10 minutes.
